Ruby Certification

The Ruby Certification recognizes catered events held at NYU that exclude red meats from their menus.

In order to qualify events must be offering food and the entire menu must follow the requirements.

  • Red Meat, including ruminant meat, produce far more greenhouse gases compared to other foods.

    If we do not serve any red meats in catering, we will reduce our absolute emissions by 6% in support of our Coolfood Pledge.

    This certification is in collaboration with NYU’s Office of Sustainability.

    • Pork

    • Goat

  • New York University is a signatory to the Coolfood Pledge, a commitment to reduce food-related greenhouse gas emissions by 38% normalized per calorie by 2030 and NYU Eats is proud of this commitment. In 2024, NYU signed onto the Mayor’s Office of Food Policy Plant-Powered Carbon Challenge with a similar commitment to reduce food-related greenhouse gas emissions by 38% normalized per calorie by 2030.
